Ripe Bananas

Need to use up some ripe bananas, but don't have enough to make banana bread? Here's a recipe for banana spice muffins (uses just 2 bananas) that I've created...
Ingredients:
one cup flour (I use a mixture of spelt and unbleached wheat, but you can use whatever you have/like.)
1 tbsp wheat germ
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 tsp ground cinnamon
1/2 tsp nutmeg
1/4 tsp ground cloves
1/4 tsp ground cardamom
1/3 cup unrefined/natural sugar
1/3 cup canola oil (or whatever kind of oil you like-- you could even use melted butter)
1 tsp. real vanilla extract
1 tbsp honey
2 ripe bananas
2 eggs
1/2 cup milk
1/2 cup chopped walnuts or pecans (optional, but tasty)
Directions:
1) Prepare muffin tins by greasing and lining (if you use paper liners).
2) Preheat oven to 350 degrees. Sift dry ingredients together (flour, wheat germ, baking soda, baking powder, salt, and spices).
3) In a mixing bowl, mash bananas with the honey. Beat in sugar and eggs. Mix in milk, vanilla, and oil. Add the dry ingredients and nuts. Stir until all is integrated.
4) Fill cups 2/3 rds to 3/4 full. Bake for 20-25 minutes. Allow to cool for about 5 minutes in the muffin tin. Transfer to cooling rack. Yields 12 muffins. Enjoy hot, warm, or cool!!!
These are scrumptious with a little cream cheese and a nice steamy cup of ginger tea!
